Glorious granola


You will need:
– a cup of mixed chopped nuts & seeds – pick your favourites
– half a cup of mixed seeds – sunflower, pumpkin, sesame, chia
– a couple of handfuls of dried coconut flakes
– 2 cups of oats
– half a cup of coconut oil, warmed gently until it's liquid
– a little cinnamon powder (optional)

Mix up all the ingredients and spread on a couple of baking sheets, lined with greaseproof paper
Bake in the oven at 120℃ for 20-25 mins, stirring halfway through, until nice and toasty
Once this is cool, you can add in extras if the fancy takes you – maybe raw chocolate chips, some dried cherries or dates

Serve with fresh fruit and some thick natural or coconut yogurt
