Gluten-free & glorious. Buckwheat pancakes

Makes around 6 pancakes

You will need:
– 115g buckwheat or oat flour (or a mix of buckwheat and plain)
– 200ml milk
– 75ml water
– half tsp cinnamon
– 1 tsp vanilla extract
– 2 eggs

Whisk all the ingredients together
Leave to stand for 15 mins (I often don't do this and it's really fine)
Melt a little butter or coconut oil in a shallow pan
Swirl in a few spoonfuls of mix, cook for a couple of mins, until you see bubbles forming on the surface, then flip over and cook the other side until golden
Serve with fresh fruit or some berries warmed through – and top with a little honey, yogurt, sprinkles of chopped nuts or toasted coconut
