Gluten-free & glorious. Celeriac soup


Serves 4

You will need:
– 3 white onions, chopped
– 1 celeriac, peeled and chopped into 1cm cubes
– 1 litre chicken or veg stock
– 200 ml white wine
– big handful of parsley

Gently soften the onions for 5 mins in around 2 tbsp each of butter and olive oil
Add the chopped celeriac, put the lid on and gently soften for 3 more mins
Add the wine and simmer with the lid off for 5 more mins
Add the stock and some salt & pepper, bring to the boil then simmer for 15-20 mins, until all the veg are tender
Add the parsley, let it warm for a minute, then blend the whole lot until smooth
