Real, simple, glorious. Thai fish parcel

Serves 2

You will need:
– 2 fillets of white fish
– ginger, lemongrass, chilli, lime
– fresh coriander
– coconut oil

lace each fillet on a square of greaseproof paper or foil
Dot with half a tsp of coconut oil
Top with a slice each of ginger and lime and a few slices of chilli and some coriander
Squeeze over a spritz of lime and seal up the parcels
Bake in the oven at 200℃ for 12-15 mins
Serve on some rice and steamed greens, sprinkled with a little more lime and coriander
