Real, simple, glorious. Veggie curry

Serves 2

You will need:
– an onion
– half tsp each of cumin, coriander, turmeric, mustard seeds
– sprinkle of chilli (optional)
– a carrot or half a sweet potato, finely sliced (use a mandoline or hard wearing potato peeler)
– mix of green veg - green beans, sugar snaps, frozen peas
– a handful of chopped kale
– tin of coconut milk (don't add all the watery liquid if you prefer a thicker curry)
– toasted cashews
– fresh coriander
– lime

Gently saute the onion in a little coconut oil until soft
Add the spices and stir for a minute
Add the orange veg, put a lid on and gently soften these for 2-3 mins (be careful not to burn)
Mix in the green veg & stir for a minute
Add the coconut milk, bring to the boil and simmer for a few mins until all the veg are tender
Serve in bowls, sprinkle over the toasted cashews, chopped coriander and a squeeze of lime
